I've been making the best steak marinade recipe for around ten years.  Everyone who tries this marinade loves it and asks for the recipe after the first bite.  This could possibly be the best steak marinade recipe ever created.



It has several ingredients, but it only takes about 5 minutes to make.  I make it the night before or in the morning and let the steaks rest in it all day.

We like this steak marinade recipe best on grilled steaks.  Don't all steaks taste better when grilled over an open flame?

I've also made it on my indoor grill.  They are still delicious, but it doesn't have that grilled flavor that we like.

I like to cook an extra steak so we have some leftover.  I use it the next day for steak salads.  Yum!

Should You Marinate Steak?


You don't have to, but we prefer it.  The ingredients in this marinade break down the fibers in the meat to make it more tender.  A steak marinade also adds some flavor for a different taste.

Does Worcestershire Tenderize Meat?


Yes, Worcestershire sauce is a great meat tenderizer.  It has vinegar in it, which breaks down the meat fibers.  It's highly concentrated, so it penetrates deep into the steak for more flavor.



How Long is Too Long to Marinate Steaks?


The USDA says that you can safely leave steaks in marinade up to 5 days.  I don't think that's necessary though.

I let them marinade overnight or all day.  I always keep it in the fridge to marinade and never on the counter.

Some people prefer to marinade their steaks for 30 minutes to four hours.  We like our steaks marinade for at least 4 hours and up to 8 hours.  We are rebels like that.

Marinading too long can make your steak mushy or too flavorful.



How to Freeze Marinaded Steaks


I buy steaks when they are on sale.  I make the marinade, put it in a gallon sized freezer bag and place the steaks inside.  Then the steaks marinade while they thaw just before I'm ready to use them.

Tips for Marinating Steaks



  • Don't pierce the meat to let the marinade penetrate deeper.  This will let juices from the meat flow out.
  • Cover the meat completely with the marinade.  It's best to use a flat container for this.   I love this container for marinading.
  • Turn the meat every hour or so while marinading so it marinates evenly.
  • Do not marinade in a metal container.  The vinegar and acid can react with the metal and alter the taste.

Combine all ingredients in a plastic or glass container.  You can use a blender to blend the marinade, but I never do.

Place the steaks in the container.  Turn them over so they are covered in marinade.



Step #3


Place in the fridge for several hours or overnight.  Four to eight hours is best in my experience.

Discard marinade after you remove the steaks.  This makes enough of the best steak marinade for two pounds of steaks.  You can halve it for two steaks or double it for more.  I make one batch for my family of 5 and turn the steaks often while they rest.
