Chocolate Zucchini Bread Recipe With Chocolate Chips

Enjoy a delicious variation on the classic summer quick bread.  This chocolate zucchini bread recipe with chocolate chips is easy to make.  Your kids won't even know that it has a vegetables in it if you don't tell them.

Every year we go to the greenhouse and my husband buys several zucchini plants.  Every year, I try to babysit him so we don't end up with more than two plants.

Every year he somehow manages to come home with at least four zucchini plants.  One year he got twelve plants.  Twelve!

Do you know how many zucchinis you get from twelve plants? A lot.  I'm talking sneaking on to people's porches at night to ditch them a lot.  



I sneak zucchini into everything meal that I can, but we still have too much.  That's when I make this chocolate zucchini bread recipe with chocolate chips.  

My kids are picky, but they love this bread.  You can not tell that there is zucchini in here at all!  It melts right into the batter as it bakes, so you might see a few green flecks but that's all.

Chocolate Chips


You can use either semi sweet chocolate chips or milk chocolate chips.  I usually use milk chocolate chips because that's what we use for pancakes and other recipes.

I prefer it with mini chips because they almost melt into the chocolate zucchini bread  My kids prefer the large chocolate chips that stay fairly solid in the recipe.

I suggest adding the chocolate chips to the dry ingredients and stirring to coat them.  This helps stop them from falling into the batter.


Oil or Applesauce


I've made this with both oil and applesauce.  Applesauce lightens it up, and it makes it lighter.  I prefer the applesauce.

You can also mix both of them, just use 1 cup total of oil and applesauce.

How Long Does Chocolate Zucchini Bread Last?


Store this chocolate zucchini bread recipe with chocolate chips for two to three days.  I put it in a plastic container and leave it on the counter.  

You can also store in the fridge for up to a week.

How to Freeze Chocolate Zucchini Bread


Chocolate zucchini bread freezes very well.  This batch makes two loaves, so freeze one for later.

Wrap the loaf in plastic wrap or foil.  Then put the wrapped loaf in the freezer bag.  

When you want to use it, place it on the counter to thaw for a few hours.

How to Freeze Shredded Zucchini


If you have a lot of zucchini and not a lot of freezer space, you can freeze shredded zucchini.  I put it in bags with 2 cups per bag so it's ready to use for this chocolate zucchini bread.



When you want to use it, put the bag in a bowl and place in the fridge overnight.  It will get watery but you want to use that water in your recipe or it will get dry.

Chocolate Zucchini Muffins


If you want to turn this into a muffin, it will make about 24 regular sized muffins.  Bake for about 30 minutes, but start checking on them at about 20 minutes.


Chocolate Zucchini Bread Recipe With Chocolate Chips Ingredients


  • 3 cups all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon ground cinnamon (I use 1/2 tablespoon)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup chocolate chips (semisweet or milk chocolate)
  • 3 eggs
  • 1 cup vegetable oil or applesauce
  • 2 teaspoons vanilla extract (make your own vanilla extract)
  • 2 cups shredded zucchini
  • 1 cup chopped walnuts (optional)

Directions


Step #1


Preheat the oven to 350 degrees Fahrenheit.  Grease two 9x5 inch loaf pans.

Step #2


Combine flour, cocoa, cinnamon, baking soda, baking powder, salt, and chocolate chips in a large bowl.  Mix well to coat the chocolate chips.

Step #3


Add oil or applesauce, vanilla, zucchini, and nuts.  Stir well.  Divide evenly between the two loaf pans.

Step #4


Bake for 55 to 60 minutes.  The bread is done with a toothpick stuck in the center of the loaf comes out clean.  Cool for 10 minutes then remove from the pan and let cool on a wire rack.
