Easy Spice Cake Mix Pumpkin Muffins

These easy cake mix pumpkin muffins only have two ingredients, so they are quick to whip up.  They are made with real pumpkin puree for a delicious fall treat.  I used a spice cake, but I'll also show you how to use different cake flavors for your pumpkin muffins using cake mix.


Fall is a busy time for many families.  As we transition from summer to school, many moms are just plain tired.  


That's why I love these 2 ingredient pumpkin spice muffins.  They only take about 5 minutes to mix, so you can have a semi homemade fall muffin with minimal prep work.





My kids love to bake, and these cake mix pumpkin muffins were a great beginner recipe.  Even though they are teens and can follow a recipe from scratch now, they still make these muffins because they are so good.  


So the next time you need to take a treat to an event and are running short on time, try these cake mix and pumpkin muffins.

Can I Use Homemade Pumpkin Puree?


I love using my Instant Pot pumpkin puree in recipes, but not in this cake mix pumpkin muffins recipe. Homemade pumpkin puree has more water than canned pumpkin puree, and your muffins might get soggy.


 What is the Secret to Making Moist Muffins?


The oil in a muffin recipe is what makes them moist.  We aren't adding any oil to these pumpkin muffins using cake mix.  If you find that they are too dry, then you can add the amount of oil that's called for on the box of cake mix to your next batch.


What Happens if You Add an Extra Egg to Muffins?


Eggs are emulsifiers, so they bind the oil and the water.  These easy cake mix pumpkin muffins don't have an egg in the recipe, but you can add 1-3 if you want to.  Check the back of the cake mix box to see how many to add.


What Makes a Muffin Light and Fluffy?


There are several things that make a muffin light and fluffy.  You want to use room temperature ingredients.  


Since these 2 ingredient pumpkin spice muffins only have pumpkin and cake mix, it's easy to do this.   However, if you do decide to add an egg or two, get them to room temperature before adding them.


Also make sure that you don't overmix your pumpkin muffins using spice cake mix.  Overmixing can cause tough muffins.





What is the Best Way to Store Cake Mix Pumpkin Muffins?


These spice cake mix pumpkin muffins will last about two days on the counter in an airtight container.  You can also store them in the fridge for up to 5 days.


I like to freeze extra cake mix muffins with pumpkin.  Place them in a freezer bag and freeze for up to three months.  Let thaw at room temperature before serving.

Should You Refrigerate Cake Mix Pumpkin Muffins?


You can refrigerate these 2 ingredient pumpkin spice muffins, but I don't recommend it.  They will last longer, but they tend to change their texture.


I recommend storing extra spice cake mix pumpkin muffins on the counter and freezing leftovers.


Can I Use Other Cake Mix Flavors to Make Cake Mix Pumpkin Muffins Recipe?


I made spice cake mix and pumpkin muffins, but you can use other cake mixes.  Chocolate cake mix and pumpkin muffins are really good.


You can also use a yellow cake mix or a white cake mix.  Add 1 teaspoons of ground cinnamon or 1.5 teaspoons of pumpkin pie spice if using a yellow or white cake mix.





Pumpkin Muffins Using Spice Cake Mix Variations


These spice cake mix and pumpkin muffins are delicious as is, but you can make the following variations:


  • Add pecans or walnuts before baking.
  • Add white chocolate chips.
  • Add dark chocolate or milk chocolate chips.
  • Add 1 to 3 eggs (as directed on the back of the cake mix box).
  • Add the oil from the cake mix directions for moist pumpkin muffins using cake mix.
  • Drizzle with maple syrup or chocolate syrup.

You will need the following to make spice cake mix pumpkin muffins:


  

Pumpkin Muffins Using Spice Cake Mix Directions


Step #1


Preheat the oven to 375 degrees Fahrenheit.


Step #2


In a large bowl, combine the cake mix and pumpkin.  Be careful not to overmix.





Step #3


Place liners in a muffin pan and distribute the cake mix muffins with pumpkin batter evenly to make 12 muffins.





Step #4


Bake for 18-20 minutes or until you can stick a toothpick into the muffin and it comes out clean.


Let cool for 5 minutes and move to a cooling rack.

How to make easy pumpkin muffins with a spice cake mix and pumpkin puree.

Ingredients

  • 15oz Box Spice Cake Mix
  • 15oz Can Pumpkin

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a mixing bowl, mix cake mix and pumpkin together.
  3. Place liners in a muffin pan and fill with pumpkin mixture.
  4. Bake for 40-45 minutes or until you can stick a toothpick into the muffin and it comes out clean.
  5. Serve & enjoy.

Notes:

If you use white or yellow cake mix, add 1 teaspoon cinnamon or 1.5 teaspoons pumpkin pie spice.
