Pumpkin Pie Overnight Oats Healthy Recipe With Chia Seeds

This pumpkin spice overnight oats recipe is an easy way to get a healthy breakfast.  You can make it in the evening or even make several to have breakfast all week long.  Although this is meant to be a healthy breakfast, I also eat it for lunch or even a sweet treat as dessert since it tastes like pudding.





I thought mornings would be easier since we aren't rushed to catch the school bus, but they are not much easier since we started homeschooling.  Mornings are rough for all moms, amiright?


I am not a morning person, but I function so much better if I can wake up before the kids so I can have my coffee in peace before I start my day.  


I use this time to check my email, browse Facebook and Instagram, and play my favorite game on my phone.  After I'm done with my coffee, I grab breakfast, start dinner prep, and then start teaching the kids.  


If I take time to make a healthy breakfast, that's less time I have for myself.  I don't like to sacrifice that time, but I want a healthy breakfast that's high in protein to keep me fueled.

That’s why I love overnight oats.  I can prep these the night before when I have more time and the atmosphere is more relaxed in our home.  When I wake up, I have a healthy breakfast waiting on me.  


Since I'm all about pumpkin spice, of course I made a pumpkin spice overnight oats recipe.  Not only is this delicious, but it's also high in protein and doesn't have refined sugars.

What Are Overnight Oats?


Overnight oats is kind of misleading because they are ready after sitting for at least four hours, but they will be good for 4-5 days after you make them.  


So you can make these pumpkin spice overnight oats—or any other flavor—on Sunday and have a healthy breakfast until Thursday or Friday.


They aren't limited to just breakfast; I've been known to eat them as a snack or even a quick lunch.


If you don't like chia seed pudding, try these overnight oats.  I prefer them because they are creamier and more like a dessert than a pudding.


What Type of Oats Are Best for Overnight Oats?


Old-fashioned oats are best for pumpkin spice overnight oatmeal.  They get creamy after sitting.  Steel cut oats may be too firm the following day, and quick oats can get mushy.


Can I Use Instant Oats for Overnight Oats?


No, I don’t recommend using instant oats for pumpkin pie overnight oats.  They are the most processed type of oats, so they are lower in fiber. 


They will also get very mushy in overnight oats.


What Size Mason Jar is Best for Overnight Oats?


I use 8 ounce mason jars for my pumpkin spice overnight oats recipe.  However, you can also use 4 ounce jars if you plan to have something else with your oats.


How Do You Make Good Overnight Oats?


The secret to good pumpkin pie overnight oats is the ratio of the ingredients.  Generally, you want to use 1 part old-fashioned oats to 1 part milk.  Then add ½ of a part of yogurt.


However, I skipped the milk and just used Greek yogurt to make pumpkin spice overnight oatmeal.  I also added pumpkin puree, which replaces some of the liquid.


This recipe is tested and gives a creamy yogurt.





How Long Do Overnight Oats Have to Soak?


Your pumpkin spice overnight oats recipe should soak for at least two hours, but four hours is better.  They can sit for several days in the fridge, so most people use them to meal prep.


Do You Eat Pumpkin Pie Overnight Oats Warm or Cold?

Do I Have to Refrigerate Overnight Oats?


Yes, you should store your pumpkin pie overnight oats in the fridge.  They will last up to 4-5 days.


Yogurt for Overnight Oatmeal


I make my own Instant Pot cold start yogurt because it’s lactose free.  While I am limiting dairy, I seem to be able to handle cooked milk and my homemade lactose free yogurt.


You can also use coconut yogurt for vegan pumpkin spice oats.


Pumpkin Puree and Pumpkin Spice


I make Instant Pot pumpkin puree and then freeze it for later.  You can use any 100 percent pumpkin puree to make pumpkin pie overnight oats.  You can freeze leftovers for the next bath so you don’t waste any.

  • It's high in fiber.

Chia Seeds for Overnight Oats


Chia seeds are wonderful things.  They turn almost into a gel to thicken things naturally, so they are responsible for turning these pumpkin spice overnight oats.  They help turn this into a creamy almost dessert instead of a yogurt.  


Sweetener


I used maple syrup in my pumpkin spice overnight oatmeal.  The maple gives it a good flavor and complements the pumpkin well.


You can also use sugar or liquid stevia.  You could also try monk fruit or coconut sugar if you’d like.

Step #1  


Combine all ingredients in a pint sized mason jar or bowl.


I put the ingredients right in a mason jar.  You could also put them in a bowl and make a large batch.





Step #2


Stir well.  Put a lid on your mason jar or cover in a bowl and put in the fridge. 


Let sit for 4 hours or up to 4-5 days.





You'll have about a cup of pumpkin leftover if you use a standard can of pumpkin puree.  You can also use it one of these pumpkin DIY beauty recipes:



You can store leftover pumpkin puree in the fridge up to 5 days.  If you don't think you'll use it by then, spoon it into an ice cube tray (I use these silicone ice cube trays) and freeze it. 


Remove it from the tray when frozen and store in your freezer in a freezer bag.  Each cube is about an ounce or a tablespoon.  Just get out what you need and let it thaw.
