CInnamon Toast Crunch Cupcakes

These cinnamon toast cupcakes are a fun twist on a classic cupcake recipe.  I made mine from a yellow cake mix, but you can also use your favorite homemade recipe if you prefer.  Save money on the boxed mix by making your own cinnamon toast crunch cupcake recipe at home.

My kids have always loved Cinnamon Toast Crunch.  When I saw the cupcake mix in the store, I knew that they'd love it.


And they did.  But I didn't love the price.  


So I decided to make my own cinnamon toast crunch cupcake recipe.

Why You'll Love Cinnamon Toast Crunch Cupcakes


If you love cinnamon cupcakes, this is an easy way to get that delicious cinnamon flavor by using a premade cereal. 


They are easy to make.  I made mine with a box of yellow cake mix, but you can also use white.  You can also use your favorite cake recipe to make them.


Homemade Cinnamon Cupcakes Tips and Tricks


Before we get to the recipe, I want to share some cupcake making tips.  


  • Use room temperature ingredients for best results.  Let the ingredients sit on the counter for about half an hour before making the cupcakes.
  • Don't overmix the batter.  Overmixing can make your cupcakes chewy or hard.  Mix until just combined for light and fluffy cupcakes.
  • Use a cookie scoop for evenly sized cupcakes.  This helps ensure that the cupcakes bake evenly.
  • Fill the cupcake liners about half to 3/4 full.  The batter will rise, so don't overfill.  If you are using a boxed mix, follow the directions on the box.
  • Bake your cinnamon toast crunch cupcakes in the middle of the oven.  The top or bottom can get too hot, causing them to bake unevenly.
  • To test for doneness, carefully press on top of the cupcake.  If it bounces back, then it is done.  Be careful because they will be hot!  You can also use a toothpick.
  • When your cupcakes are done baking, let them sit in the pan for 2 minutes then transfer to a wire cooling rack.  This stops them from cooking in the pan.
  • Let the cupcakes cool completely before frosting them.

How to Make Cinnamon Toast Crunch Cupcakes


Step #1


Preheat the oven to 350 degrees F.  Place cupcake liners into a pan.


Step #2


Add the cake mix to a large mixing bowl.  Add the water, oil, and eggs.  Mix by hand or with a hand mixer until combined.  Fold in 3/4 cup of the crushed cereal.





Step #3


Add batter to the cupcake liners to fill to 2/3 cup full.  Bake for 18 to 20 minutes.  Let cool completely.





Step #4


In a large box, cream the butter until it is light and fluffy.  Add the vanilla extract and salt.


Step #5


Add the powdered sugar 1 cup at a time.  Add the tablespoon of cream in between each cup.  Mix for 1 minute or until creamy.





Step #6


Place the frosting in the piping bag and frost the cupcakes.





Step #7


In a small bowl, heat the cinnamon chips and milk in the microwave on 50 percent power for 25 seconds.  Stir.  If the chips are not melted, then repeat.


Step #8


Drizzle the cinnamon chip mixture over frosted cupcakes.  Top each cupcake with crushed cereal.
