Although I prefer to make my cakes and cupcakes from scratch most of the time, sometimes I just like the convenience of using a cake mix.  


These pumpkin spice cupcakes with cake mix are easy to make, and you don't even need eggs or oil!  Instead, you'll use pumpkin and peanut butter to make them.


I made a peanut butter frosting, but you can swap that for your favorite frosting flavor.

You'll love these easy pumpkin spice cupcakes because they only have three ingredients!  You just need the spice cake mix, pumpkin puree, and peanut butter to make them.


You don't need to add the oil or butter and eggs for the cake mix.  The pumpkin and peanut butter replace the oil and eggs, so they are still fluffy with a cake like texture.


Although you only need three ingredients, you can also make some easy swaps to change the flavor.  I'll have ideas for variations below.


How Much Pumpkin to Add to Cake Mix


It depends on the recipe, but generally you'll add one cup or one 15-ounce can of pumpkin for one box of cake mix.


I used both pumpkin puree and peanut butter, so I used half of a cup of pumpkin and  1/4 cup peanut butter.  You can use 1 cup of pumpkin and omit the peanut butter if desired.


How to Make Pumpkin Cupcakes With White Cake Mix


You can definitely use a white cake mix or yellow cake mix to make pumpkin pie spice cupcakes.  You can either use it plain or add spices to the cake mix.


I suggest adding 1/2 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon ground nutmeg.  I suggest buying high quality spices for best flavor.

Pumpkin puree can take the place of both oil and eggs in a recipe.  I often use applesauce in place of oil or butter with great results.


Applesauce has a milder flavor, and I can a lot of it each year.  Pumpkin gives these easy pumpkin spice cupcakes a delicious pumpkin flavor as well as lightens up the food by reducing fat and calories.





Pumpkin Peanut Butter Cupcakes Variations


This pumpkin spice cupcakes recipe is fairly easy, but here are some variations that you can make:


  • Make sure to use pumpkin puree and not pumpkin pie mix.
  • You can use store bought pumpkin puree or make pumpkin puree in the Instant Pot.  
  • You can replace the peanut butter with pumpkin if desired.
  • You can use a white cake mix or yellow cake mix to make pumpkin spice cupcakes with cake mix. 
  • If you use a white or yellow cake mix, then you can add 1/2 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon ground nutmeg to add spices if desired.
  • This will also work with a chocolate cake mix.
  • I made a peanut butter frosting, but you can use your favorite buttercream frosting, cream cheese frosting, chocolate frosting, or a maple frosting.  


How Long Do Cake Mix Pumpkin Cupcakes Last?


Your pumpkin pie spice cupcakes will be best with 24 hours of making them.  However, they will be good for up to 2 days.


Store them in an airtight container at room temperature.  If you use a cream cheese frosting or other frosting that needs to be refrigerated, then store in the fridge for up to 2 days.

You will need the following to make pumpkin peanut butter cupcakes:



Peanut Butter Frosting Ingredients


  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1-2 tablespoons milk





How to Make Pumpkin Pie Spice Cupcakes With Peanut Butter Frosting


Step #1


Preheat oven to 350 degrees F.  Line a muffin pan with cupcake liners and set aside.


Step #2


Combine the spice cake mix, peanut butter and pumpkin puree in a large bowl.  Mix for at least three minutes.





Step #3


Scoop the cake mix pumpkin cupcakes into the cupcake liners.


Step #4


Bake for 25 to 30 minutes.  They are done when a toothpick inserted into the center comes out clean.  Let cool completely before frosting.


Step #5


In a large bowl, beat the softened butter and powdered sugar for 2 to 3 minutes.  Then add the peanut butter and mix well.  Add milk as needed to get the desired consistency.  





Step #6


Place the peanut butter frosting in a piping bag with a large tip.  Swirl the frosting onto the cupcake.
