These hot cocoa cookies are a delicious cookie for winter or any time of the year.  I made a peppermint hot cocoa cookies recipe, but you can use marshmallows or your favorite topping.  These cake mix cookies are easy to make in just a few minutes for a quick treat.

How to Store Hot Chocolate Mix Cookies

To keep your hot cocoa cookies fresh and delicious, store them in an airtight container at room temperature. Be sure to seal the container tightly to prevent air and moisture from seeping in, as exposure to humidity can cause the cookies to become stale. 

With proper storage, your hot cocoa cookies will stay soft and chewy for several days, though they're likely to disappear much sooner than that!

You can also freeze leftovers, but it might make the toppings soggy when you thaw them.

How to Make Peppermint Hot Cocoa Cookies Recipe

Step #1

Preheat your oven to 350 degrees F.  Line a baking sheet with parchment paper.

Step #2

Combine the cake mix, hot cocoa mix, eggs, and oil in a large bowl.  Stir until it forms a dough.

Step #3

Use a cookie scoop to drop spoonfuls onto the baking sheet.  Place dough 2 to 3 inches apart.  Bake for 7 minutes.

Step #4

After 7 minutes, remove the cookies from the oven and place one half of a marshmallow in the center.  Bake for one more minute and then remove from the oven.

Step #5

Add the chocolate to a piping bag.  Heat for 15 seconds in the microwave until melted.  Snip off the end and drizzle chocolate over the center or each cookie.  Sprinkle with crushed candy canes.

Let cool and enjoy!
