The Best S'mores Cookies With Cake Mix

14 September

How to make s'mores cookies with cake mix.  These are semi-homemade, so they are quick to make.  You can use a yellow cake mix, white cake mix, or even a chocolate cake mix for the best s'mores cookies.

S'mores are my favorite food for summer and fall nights with a campfire.  We always have a little container with the supplies we need to make them.

I also love s'mores desserts, including these homemade s'mores cookies.  They are cookies made with yellow cake mix, so they are very easy to make.

My kids love to bake, and these semi-homemade cake mix cookies are perfect for beginning bakers.

How to Make S'mores Cookies

I used to make my own cake mix, but now I just buy it.  My local grocery store doubles coupons, so I can get them pretty cheap.

Otherwise, I just grab a cake mix from Aldi.  They have great cake mixes at a great price.  I prefer theirs to name brand, but I'll use the name brand to make cookies made with yellow cake mix if they are cheap.

I prefer the Betty Crocker Super Moist cake mixes.

What Does S'mores Stand For?

S'more is a shortened form of "some more" as if I want s'more!  The story goes that a recipe published in 1938 was called s'more.  In 1956, a recipe for graham crackers, toasted marshmallows, and chocolate was published.

Is S'more an American Thing?

Yes, s'mores seem to be an American thing.  Graham crackers aren't popular all over the world, so many people outside of America aren't familiar with this summer dessert and haven't had homemade s'mores cookies.

However, no matter where you live, this recipe for s'mores cookies is worth sourcing the ingredients!

What are S'mores Cookies?

A s'mores cookies recipe is like a s'more, but it's a cookie.  It's similar to a chocolate chip cookie, but it also has bits of marshmallows and crushed graham crackers.

How Do I Thicken a Cake Mix for Cookies?

This ratio of ingredients for these cookies made with yellow cake mix should be good, but cake mixes do vary.  If you make your own cake mix from scratch, then you might have to make some adjustments.

If your s'mores cookies with cake mix batter is too thin, then you can simply add more flour to make it thicker.

Can You Substitute Butter for Oil in Cake Mix Cookies?

Yes, you can use butter instead of oil when you make this recipe for s'mores cookies.  Butter gives it a richer flavor, but oil makes it moist.

You would use the same amount of butter as you would oil.

I recommend melting the butter so it gets mixed in well.  Then after mixing, refrigerate the dough to prevent the cookies from spreading in the oven.

You can also use applesauce or mashed banana in place of the butter or oil, but this can alter the taste of your s'mores cookies recipe.

What is the Difference Between Cake and Cookie Mix?

The ingredients in cake mix and cookie mix is pretty much the same, however, the ratios are off.  A cake mix is typically thinner than a cookie mix.

How to Make S'mores Cookies Without Graham Crackers

You can make a recipe for s'mores cookies without graham crackers.  If you live in an area that doesn't have graham crackers or just don't like them, you can omit them.

You can also substitute digestive biscuits or your favorite cookie or cracker.

How to Make S'mores Cookies With Variations

Try one of these variations for your s'mores cookies recipe:

  • Use pretzels or another cracker in place of the graham crackers.
  • Substitute white chocolate chips for all or part of the chocolate chips.
  • Use the same amount of melted butter for the oil.
  • Try making homemade s'mores cookies with a white cake mix or chocolate cake mix.
  • Make bar cookies with this recipe for s'mores cookies.  Spread batter in a 9x13 pan.  Then bake at 350 degrees for 20 to 25 minutes.
