Healthy Strawberry Muffin Recipe With Fresh Strawberries

This healthy strawberry muffin recipe is a delicious way to use fresh strawberries.  It's made with Greek yogurt, and it doesn't have refined sugar or white flour.  I also have options to make this vegan or dairy free.  


Although we don't really celebrate Valentine's Day, I still like to make the kids some themed treats each year.  


Red dye is a no no for my middle one, so I use naturally dyed foods instead.   For Valentine's Day, it was just natural to make a fresh strawberry muffin recipe.  





Of course, these muffins with applesauce instead of oil aren't limited to Valentine's Day; they are delicious any time of the year.


I also make them with strawberries are in season in early June.  I buy a flat of berries and make a fresh strawberry muffin recipe along with some jam.


Healthy Strawberry Muffin Recipe


My kids love muffins for breakfast, a snack, or dessert.  I'd prefer that they didn't get refined flour or refined sugars, but I also want the muffins to be delicious.


I've learned a few tricks for healthy (or healthier - I won't judge!) muffin recipes.  You can definitely make some modifications to this recipe.





Flour Choice


When I bake, I use wheat flour or white whole wheat flour.  White whole wheat flour has a better texture than whole wheat, but neither one are just like white flour.  


If you are new to using wheat flour, then I recommend using half white flour and half whole wheat or white whole wheat flour.  This doesn't change the texture as much, and your family won't even notice.


I used all white whole wheat flour.  As you can see, my muffins were dense and not light and fluffy.  They did have a good flavor though!


Muffins With Applesauce Instead of Oil


I almost always use unsweetened applesauce instead of oil for my baked goods.  It makes them more cake like and fluffier, which works really well since I replaced the flour with wheat flour.


I use applesauce because I make my applesauce and can it for all year long.  The apple flavor doesn't affect the taste of this healthy strawberry muffin recipe.


You can also use a ripe mashed banana or plain Greek yogurt.  Both work really well as a substitute for applesauce.  





Butter


I used butter in my recipe, but you can also use coconut oil for a vegan strawberry muffin recipe.


Sweetener


The original recipe that I adapted called for white sugar.  I'm limiting our white sugar intake, so I used maple syrup.  Honey also works, but I like the maple flavor in this healthy strawberry muffin recipe.


You can also use white sugar, monk fruit, or your favorite sweetener.  You may need to adjust the amounts, so be sure to follow the conversion chart on your product.


Milk


I used cow's milk for my healthy strawberry muffin recipe.  You can use almond milk or oat milk if you prefer.


No Egg Option


I haven't tried to make egg free healthy strawberry muffins, but I would recommend using flax seeds to make flax eggs.  





Fresh Strawberry Muffin Recipe Tips


Normally, when I make a fruit muffin, I toss the fruit with some flour.  This helps hold them in the batter so they don't sink.  However, this is a thick batter with the white whole wheat flour, so it's not necessary.


You can substitute the strawberries for blueberries, raspberries, or other fruits.  I've also used freeze dried strawberries.


Use coconut oil for the butter and almond milk for the milk for a dairy free muffin.


Use flax eggs in place of the eggs and use the dairy free exchanges for a vegan strawberry muffin.


If your family isn't used to wheat flour, use half white flour and half whole wheat flour or white whole what flour.  Your muffins will taste very similar to a traditional muffin.


Only use fresh strawberries in this healthy strawberry muffin recipe.  Frozen strawberries have excess water, which can cause the muffins to get soggy.  


Overmixing any muffin batter will make it hard.  This healthy strawberry muffin recipe is already dense thanks to the wheat flour, so mix just until combined.  


I recommend using real vanilla extract.  Learn how to make vanilla extract at home or make Instant Pot vanilla extract.


I also recommend making healthy strawberry popsicles with chia seeds for a delicious healthy breakfast.





Healthy Strawberry Muffin Recipe Ingredients


  • 1 cup applesauce
  • 1/2 cup melted butter
  • 1/2 cup maple syrup
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup white whole wheat flour or 1/2 cup white flour and 1 cup white whole wheat flour
  • 1 1/2 cup chopped fresh strawberries

Healthy Strawberry Muffin Recipe Directions


Step #1


Preheat oven to 375 degrees Fahrenheit.  Line a muffin pan with paper liners or spray with olive oil.  


Step #2


In a large bowl, combine applesauce, maple syrup, milk, eggs, and vanilla.  Use a whisk to combine.  


Step #3


In a small bowl, combine the baking powder, baking soda, and salt.  Stir to combine.  Add to the applesauce mixture and stir well.


Step #4


Add the flour(s) and mix until just combined.  Do not overmix.  Fold in the strawberries pieces.


Step #5


Add 1/3 cup batter to each muffin tin.  Bake for 15 to 17 minutes.  Use a cake tester to ensure that the center of the muffin is cooked.  


Step #6


Let the muffins cool for 5 minutes then place them on a wire cooling rack.  


These healthy strawberry muffins can be stored up to 3 days on the counter in a sealed container.   You can also freeze them up to 2 months.
