What Are Bailey's Boozy Bombs?
Bailey's Boozy Bombs are a grown-up version of traditional hot chocolate bombs. Instead of filling the chocolate shell with cocoa mix and marshmallows, these are filled with a silky Bailey's Irish Cream white chocolate ganache.
When placed in a mug and covered with steaming hot milk, the chocolate shell melts open, revealing the creamy filling inside. Stir everything together for an incredibly rich, dessert-like drink.
For an even stronger Irish cream flavor, add a Bailey's-filled pipette just before serving.
These are similar to the fireball boozy bombs that I posted last year if you want a different variation.
Ingredients
- 4 cups white chocolate chips
- ½ cup Bailey's Irish Cream
- Chocolate sprinkles
- Whipped cream, for serving
You'll also need:
- 2.5-inch silicone sphere mold
- Microwave-safe bowls
- Spoon or silicone spatula
- Warm frying pan
- Cooling rack or baking sheet
How to Make Bailey's Boozy Bombs
Step 1: Make the White Chocolate Shells
Melt 2½ cups of the white chocolate chips in the microwave using 30-second intervals, stirring between each until smooth.
Fill each silicone mold cavity with melted chocolate. Use the back of a spoon to pull the chocolate up the sides, coating the entire cavity.
Allow the shells to set completely.
Apply a second layer of chocolate around the upper rim of each cavity to strengthen the seal.
Allow to harden.
Step 2: Make the Bailey's Ganache
Combine the remaining 1½ cups white chocolate chips with the Bailey's Irish Cream in a microwave-safe bowl.
Microwave for 1 minute, then stir until smooth. If necessary, heat for an additional 30 seconds.
Allow the ganache to cool completely before filling the shells.
Step 3: Assemble the Bombs
Carefully remove each chocolate shell from the mold.
Warm a frying pan slightly.
Place one shell edge-down onto the warm pan for a second or two to melt the rim.
Fill with approximately 2 tablespoons of Bailey's ganache.
Warm the edge of a second shell and immediately place it over the filled half.
Press gently around the seam to create a smooth seal.
Repeat with the remaining shells.
Step 4: Decorate
Drizzle the remaining melted white chocolate over each bomb.
Decorate with chocolate jimmies sprinkles before the chocolate sets.
How to Serve Bailey's Boozy Bombs
- Place one bomb into a large mug.
- Heat 8 to 12 ounces of milk or water until very hot. Hot milk creates the creamiest drink, while water produces a lighter version.
- Slowly pour the hot liquid over the bomb and watch it melt open.
- Stir thoroughly until smooth.
- Top with whipped cream and enjoy.
- For an extra indulgent cocktail-inspired drink, add a Bailey's-filled pipette just before serving.
Storage
Store Bailey's Boozy Bombs in an airtight container at room temperature for up to 6 months.
Keep them away from heat, humidity, and direct sunlight to maintain the best texture and appearance.
Tips for Perfect Boozy Bombs
- Use Good Quality White Chocolate. Higher-quality white chocolate melts more smoothly and creates stronger shells that are less likely to crack.
- Build Thick Edges. Adding an extra layer of chocolate around the rim gives the spheres plenty of strength when sealing them together.
- Let the Ganache Cool. Don't rush this step. Warm ganache can melt through the chocolate shell, making assembly difficult.
- Warm—Not Hot—Pan. A gently warmed frying pan melts the edges just enough to create a seamless seal without melting the entire bomb.
- Work Carefully. Chocolate shells are delicate. Remove them from the silicone mold slowly to avoid cracks.
- Make Shot Glasses. Don't want to fuss with the sphere mold? Make chocolate shot glasses instead.
Frequently Asked Questions
Can I use milk chocolate instead of white chocolate?
Yes. Milk chocolate creates a richer flavor that pairs wonderfully with Bailey's Irish Cream. Dark chocolate also works for a less sweet version.
Does the alcohol cook out?
No. Since the Bailey's Irish Cream is only gently heated and not boiled, a portion of the alcohol remains in the finished ganache. Do not serve these to children or anyone under the legal drinking age.
Can I freeze Bailey's Boozy Bombs?
While you can freeze them, refrigeration or freezing may cause chocolate bloom or condensation. Room-temperature storage in an airtight container is recommended.
Can I make these ahead of time?
Absolutely! These are excellent make-ahead treats for holiday gatherings, parties, and gift giving since they store well for months.
