How to make a homemade caramel sauce recipe.  This salted caramel sauce can be made on the stove or in the Instant Pot pressure cooker.  Use this is a delicious topping for ice cream and other desserts.  You can even add it to coffee.


Fall means apples, and apples mean caramel.  We use this salted caramel topping recipe for apple dishes, but I also use it for ice cream and for coffee.




This is the best salted caramel sauce recipe that I've adapted to make in the Instant Pot.  I love my Instant Pot pressure cooker, and it's so easy to use for many things instead of using the stove or oven.

Yes, it does have sugar in it, but it doesn't have dyes, preservatives, or high fructose corn syrup.


What's the Difference Between Dulce de Leche and Caramel?


Most Instant Pot caramel sauce recipes are for dulce de leche.  Dulce de leche means candy made from milk, and it's made by pressure cooking sweetened condensed milk in the Instant Pot.  


While dulce de leche is yummy, I wanted to how to make caramel sauce at home with a recipe with sugar and cream.


Dulce de leche is made from cooking cow's milk and sugar together slowly.  They are cooked at a lower temperature, and the golden hue comes from the lactose and lysine browning.  This gives dulce de leche a nuttier and more mellow flavor.


This salted caramel sauce recipe is made from cooking down granulated sugar.  As it cooks, the sugar gets toasty and rich in flavor.  The caramelized sugar gives this Instant Pot caramel its color.


Butterscotch is cooked similar to dulce de leche and salted caramel topping.  However, butterscotch is made by cooking dark brown sugar and butter.  It's sweeter and had a milder flavor than does caramel.




What is Caramel Sauce Made Of?


This homemade caramel sauce recipe is made of water, sugar, heavy cream, unsalted butter, and sea salt.  It's a basic recipe, but it tastes so good!


Why Does My Caramel Taste Bitter?


When learn how to make caramel sauce at home, it's important to cook it long enough to make caramel but not too long.  As you cook this Instant Pot caramel sauce, the sugar starts to break down.  This is what gives caramel it's taste and tones down the sweetness of the salted caramel topping.


However, if you cook this salted caramel topping recipe too long, the caramel can get bitter due to the sugar breaking down.  It's important not to overcook for the best salted caramel sauce recipe.


Does Caramel Sauce Harden?


This salted caramel sauce recipe should not get hard.  However, it will harden if it gets cold in the fridge.  You can simply place the jar in warm water or heat it to soften it if it gets too hard.



What Do You Do if Caramel Sauce is Too Hard?


I've made this salted caramel sauce recipe easy several times, and it shouldn't get too hard at room temperature.  


However, if you find that it's too hard, you can reheat it and add more heavy cream.


If it's just hard when it gets cold, then you can place the jar in warm water to soften it.  You can also microwave it or heat it on the stove, but be careful not to overcook it.



How Long Will Homemade Caramel Sauce Last?


This Instant Pot caramel sauce will last in the fridge for up to three weeks.  If you use it on a dessert or cake, it will last at room temperature for three days.  You can also freeze a homemade caramel sauce recipe for up to three months.


Does Salted Caramel Sauce Need to Be Refrigerated?


Yes, you should store this salted caramel sauce recipe easy in the fridge.  It will only last for three days at room temperature, but it will last up to three weeks in the fridge.


I store mine in a pint mason jar with a plastic lid.  I was using the cheap plastic lids, but they cracked when I looked at them the wrong way.  The Ball lids are much sturdier and worth the extra money.

No, unfortunately, you can not safely can this Instant Pot caramel sauce recipe.  I recommend storing leftover caramel topping in the freezer for up to three months.

Instant Pot Homemade Caramel Sauce Recipe 


These are recipes to make Instant Pot caramel sauce.  The stovetop slated caramel topping recipe is below.


Step #1


Add sugar and water to the Instant Pot.  Use the sauté function on high for 10 to 15 minutes until the syrup reaches 302 degrees Fahrenheit or 150 degrees Celsius with a candy thermometer.





Step #2


When it reaches temperature, turn off the Instant Pot.  Add the heavy cream to the caramel and whisk until combined.




Step #3


Add the unsalted butter and sea salt while whisking.


Step #4


Pour your salted caramel topping into a jar.  Store in the fridge for up to three weeks.

Step #1


Combine the sugar and water in a medium sized pan and stir to combine.  Cook over medium heat without stirring for about 5 to 7 minutes or until it reaches 302 degrees Fahrenheit or 150 degrees Celsius.


Step #2


Reduce the heat to low and add the heavy cream.  Remove from heat and add the butter and sea salt.  Stir well and pour into a jar.  Store in the fridge for up to three weeks.
