What's the Difference Between Dulce de Leche and Caramel?


Most Instant Pot caramel sauce recipes are for dulce de leche.  Dulce de leche means candy made from milk, and it's made by pressure cooking sweetened condensed milk in the Instant Pot.  


While dulce de leche is yummy, I wanted to how to make caramel sauce at home with a recipe with sugar and cream.


Dulce de leche is made from cooking cow's milk and sugar together slowly.  They are cooked at a lower temperature, and the golden hue comes from the lactose and lysine browning.  This gives dulce de leche a nuttier and more mellow flavor.


This salted caramel sauce recipe is made from cooking down granulated sugar.  As it cooks, the sugar gets toasty and rich in flavor.  The caramelized sugar gives this Instant Pot caramel its color.


Butterscotch is cooked similar to dulce de leche and salted caramel topping.  However, butterscotch is made by cooking dark brown sugar and butter.  It's sweeter and had a milder flavor than does caramel.

I store mine in a pint mason jar with a plastic lid.  I was using the cheap plastic lids, but they cracked when I looked at them the wrong way.  The Ball lids are much sturdier and worth the extra money.

Step #1


Add sugar and water to the Instant Pot.  Use the sauté function on high for 10 to 15 minutes until the syrup reaches 302 degrees Fahrenheit or 150 degrees Celsius with a candy thermometer.





Step #2


When it reaches temperature, turn off the Instant Pot.  Add the heavy cream to the caramel and whisk until combined.




Step #3


Add the unsalted butter and sea salt while whisking.


Step #4


Pour your salted caramel topping into a jar.  Store in the fridge for up to three weeks.

Combine the sugar and water in a medium sized pan and stir to combine.  Cook over medium heat without stirring for about 5 to 7 minutes or until it reaches 302 degrees Fahrenheit or 150 degrees Celsius.

Reduce the heat to low and add the heavy cream.  Remove from heat and add the butter and sea salt.  Stir well and pour into a jar.  Store in the fridge for up to three weeks.
